From December through March, the vines are dormant — and this is when the careful, skilled work of pruning and preparation takes place. Our winter vineyard care programme connects retreat groups with local viticulturists for hands-on participation in this essential seasonal work. You'll learn to read a vine's structure, decide which canes to keep and which to cut, tie the remaining growth to the wire trellises, and clear the soil around the roots. It's quieter work than the harvest — meditative, even — and the winter light on the coastal slopes is hauntingly beautiful. For groups retreating in the off-season, this is an unexpectedly powerful team experience: slow, deliberate, skilled work that rewards patience and attention.
